Cells of Saccharomyces carlsbergensis growing in medium DPE and with glucose, or galactose, or maltose have different fermenting capacities for galactose, maltose and raffinose. From these observations we can considered that they have as constitutive enzymes maltase, galactosidase and galactowaldenase.Downloads
